Make jam! But again, I'm biased. I'm already planning my next batch, as our pint is pretty much gone. After weeks having too many tomatoes on my hands, I suddenly find myself longing for those on the vine to ripen faster!

Love your tomato-envy; one just out of reach always seems much more tempting, no?

But I don't WANNA can stuff.

Seriously, aside from the botulism thing, I don't have the space. I can freeze stuff easily - there's still a bit of room in my freezer - but I really don't have shelf space for all the jars and do-hickeys needed to do the whole canning thing.

The folks use a pressure cooker, no? And have a big, big basement in which to store said jars of stuff plus empty jars, pots, tongs, racks and whathaveyou. I don't.

But between you and Dana, I'm convinced to do the sauce thing. But it will go in the freezer, because it's easier, safer and there's actually room in there.

Mother & Father Dearest have been canning for years (actually at least as long as I can remember Pop has grown tomatoes) and never once have they or I even had a little tummy ache. Sure the odd instance of heartburn but that was surely the fault of the overzealous old dude throwing every spice on hand into the mix (heh..."ALL" spice).

CAN IT you!

Make sauce! You'll be glad to have it. And, if you don't want to can, just freeze it. That's what I do.
